Product-mix by size — your real bread demand

Total sandwich count doesn’t tell you how much bread you use; the mix does. Two six-inch subs use one loaf, a footlong uses one, and a sub platter can be five. Pull the item-level sales and group them into footlongs, six-inch, and catering, and you can convert sales straight into loaves consumed — the foundation of an accurate bread pull. Day-of-week demand curves
